Vinification: Cryomaceration for 10 hours at 10 °C, chilled fermentation at 15–16 °C, fermentation duration 25–30 days.
Aging: Stainless steel tanks with cooling capability.
Wine characteristics: The wine offers a non-uniform diversity—an inherent minerality and ripe Mediterranean fruitiness. On the palate, it is fleshy, full, and compact. Its firm structure is primarily defined by the balance between crisp, pleasant freshness and warmth, which the freshness completely controls. While its evident fruitiness gives it softness, the dryness—though seemingly secondary—adds to its elegance.
Food and wine pairing: Shellfish, scampi, pasta, white and blue fish, cheese, prosciutto, roasted veal, spit-roasted lamb…
